salad and breakfast to go

When we're on the road, which happens a lot, especially traveling to the east of our country, we always try to take some of our own food with us. This way we make sure that we eat healthy and tasty. That's usually a salad, with something sweet such as dates en for example vegetarian balls. The dates and veggie balls are great snacks when you're hiking in the woods too. When travelling, we stop somewhere along the way or eat something in the train. For breakfast we usually take assorted nuts, flaxseed, cinnamon and dried fruits with us. I'll talk about breakfast another time. Today, I made the following salad to go, which is a great basic salad to adapt to your taste (or ingredients that you have at home). We also bought bowls from Mepal, which have a screw lid so it won't leak and that are available in various sizes and colors.

2 red onions, in big slices
2 pieces of garlic cut into small pieces
2 big carrots, grated
2 handful of fresh parsley, cut
1 tin of lentils
2 spoons of dried mediterranean herbs
juice of 2 fresh lemons
1 can of tuna in olive oil
roasted sesame seed
extra vergine olive oil
mix everything together; add the sesame on top
