quick n easy salad on the side


This is what's left of a quick n easy salad on the side that I ate for lunch today. :-)
I had some leftover curry from yesterday. I didn't want to eat no salad at all but also didn't feel like making a big deal of a salad on the side. So this is what I made.

-the leaves of half a red leaf lettuce, cut into pieces with scissors
-the juice of 1 fresh lemon
-extra vergine olive oil
-fresh ground pepper
-mediterreanan herb mix (dried)
mix everything together and voila: a very fresh, tasty salad with a bite.
you can add more ingredients, ofcourse. I could have added avocado (thought about that later), but I was pressed for time and really wanted something healthy and tasty quickly.
btw: you can add toasted seeds but as I already had pumpkinseeds on my leftover curry, I didn't bother and it tasted great anyway.
